#MeatFreeMonday – Cauliflower is King

Its January and we are all making a few changes and resolutions and it is a great time to try something new. Some of you may even be trying out Veganuary, and if you are then here are some delicious Cauliflower recipes to help you out.
I love a good cauliflower recipe, I think they are one of the most underutilized vegetables, they are so versatile and really delicious, here are some of my favourite winter recipes.

Whole Roasted Cauliflower

Whole Roasted Cauliflower by Jamie Oliver, is great for the centerpiece of a sunday roast or a persian inspired dinner, again with many variants there is a recipe for everyone. Here are some more inspirational recipes from Pinterest. 

Roasted Galic Cauliflower Mash

Then if you’re looking for a low-calorie side post-Christmas then Cauliflower Rice or Cauliflower Mash are delicious alternatives. You can now buy cauliflower rice pre-prepared from most supermarkets.

If you want to be a little naughty then you must definitely try the Southern Fried Cauliflower from OOWEE on North Street, they also serve Vegan & Veggie Burgers which are delicious.
